Tortellini Soup

2 lbs italian meatballs
1/2 cup dried onions
2 Tbsp minced garlic
4 - 13.75 oz cans beef broth
1 C apple juice
2 C water
2 cans of diced veggies, or use frozen
2 - 15oz cans of diced italian tomatoes
2 tsp basil
2 tsp oregano
4 Tbsp parsley
16 oz cheese tortellini

In a stock pot or crock pot, combine all but the tortellini. Let simmer at least 30 minutes. Add Tortellini 5 minutes before desired serving time. Garnish with parmesan cheese.
