7 Can Frito Soup


1 lb hamburger

1 med onion, chopped

1 can red kidney beans

1 can green beans

1 can black beans

1 can corn

2 cans diced tomatoes

1 can tomato sauce

1 pkg taco seasoning


Garnish with:

Frito chips

cheddar cheese

sour cream


DON'T drain cans!! Brown hamburger and onion. Add all ingredients to crock pot and cook on low for a few hours (or simmer for 15-20 minutes on stove).

Chili


2 cans stewed tomatoes

2 small cans tomato sauce

2 cans chili beans

1 lb sausage

1 onion


To Taste:

salt

pepper

chili powder


Top With:

sour cream

cheese


Cook sausage with onion. Add all ingredients to crock pot and simmer on low for a few hours. Top with cheese and sour cream.

Cheddar Broccoli Soup


1 quart water

4 chicken bullion cubes

2 stems broccoli

6 carrots

1 onion


1 quart half & half

4 cans cream of potato

2 cups cheddar cheese


Boil first five ingredients for 15 minutes with a lid; cool slightly. Add last three and warm in crock pot.

Crock Pot Beef Stew


1 lb stew meat

2 cans diced tomatoes

4-6 potatoes

2-4 celery stalks

3-5 carrots

1 onion

1 can beef broth

1 cup water

2 beef bullion cubes

1 pkg onion soup mix

1-2 Tbsp cornstarch

TO TASTE:

celery salt

garlic powder

basil

oregano

parsley flakes

salt

pepper

Add all ingredients that don't need to be chopped. Chop the rest and add. Heat on high until potatoes are tender. Simmer on low until ready to serve.

Basque Leek Soup


½ cup chopped onion

3 garlic cloves

2-3 Tbsp olive oil

3 celery stalks

1 leek (or pkg green onions)

5 carrots

6 peeled potatoes

5 chicken bullion cubes

8-10 cups water


Top with:

salt

pepper

cheese


Saute onion and garlic in olive oil. In stock pot add rest of ingredients, roughly chopped. Add onion and garlic. Boil for 30 minutes or until everything is soft. Blend up whole stock pot of ingredients. Serve with toppings.

Yummy Poatoes


6-8 med potatoes
2 cans cream of chicken soup
1 cup sour cream
1 cup cheddar cheese
cubed ham or diced lunch meat ham

Boil and drain potatoes. Place in a 9x13 pan. Mix soup, sour cream, cheese and ham. Pour over potatoes. Bake at 375 for 30 minutes.

Sloppy Joe's

1 lb ground beef
1 cup ketchup
½ cup water
1-2 tsp vinegar
2-3 Tbsp worcestershire sauce
2 Tbsp sugar
1-2 tsp hot sauce
a few shakes dried minced onions
a few shakes of garlic salt
8 hamburger buns
Brown beef, drain. Pour remaining ingredients over beef and stir well. Simmer on stove or in a crock pot until desired doneness is achieved. Serve on buns with a slice of cheese, if wanted.

Shepherd's Pie


1 lb ground beef

1 Tbsp olive oil

½ cup chopped onion

½ tsp salt

½ tsp pepper

14 oz can green beans, drained

2 cans tomato soup

6 potatoes, peeled, boiled and mashed

½ cup milk

1 tsp salt

2-3 cups grated cheese


Brown beef in oil. Add onion, salt and pepper. Saute until onion is tender. Place in a greased 9x13 dish. Top with green beans. Spread tomato soup on top. Combine potatoes, milk and salt. Mix well and spoon over tomato soup. Top with cheese. Bake uncovered at 350 for 30-40 minutes.

Russian Chicken


3 chicken breasts

1 pkg onion soup mix

1 bottle russian dressing

½ cup sugar

rice


Cook all ingredients in crock pot except rice. Shred chicken. Serve over rice.

Pizza


11 oz water
2 Tbsp olive oil
3 cups and 3 Tbsp flour
2 Tbsp sugar
1 tsp salt
2 ½ tsp yeast
italian seasoning
garlic powder

Knead all ingredients for 10 minutes. Allow to rise for 30 minutes, punch down and rise for 30 more minutes. Divide into two separate balls. Roll out into pizza round on floured surface. Place on lightly greased pan, cover with sauce and cheese. Bake at 375 for 15-20 minutes, then wrap in tin foil.

Pizza Sauce
8 oz can tomato sauce
½ tsp italian seasoning
¼ tsp garlic powder
½ tsp salt

Mix together and add to uncooked pizza.

Parmesan Chicken


½ cup parmesan cheese
½ cup bread crumbs
¼ tsp thyme
½ tsp pepper
½ tsp garlic salt
1 Tbsp seasoned salt
2 tsp parsley
½ cup melted butter
chicken tenders

Mix all ingredients except butter and chicken. Dip chicken in butter then mixture. Bake at 350 for 20-25 minutes. (30-35 minutes for chicken breasts.)

Mini Meatloaf


1 lb ground beef

1-6 oz pkg stove top

1 tsp garlic powder

¾ cup barbecue sauce

¾ cup cheese


Heat oven to 375. Mix meat, stuffing mix, one cup water and garlic powder. Press into 12 muffin cup tin sprayed with cooking spray. Make indentation in the center of each mini loaf with a spoon; fill with sauce. Bake for 30 minutes or until cooked through. Top with cheese then bake 5 minutes more.

Hobo Meatloaf


1 med onion, thinly sliced

¼ cup dry bread crumbs

2 tsp chili powder

1 cup salsa, divided

1 tsp garlic salt, divided

½ tsp ground cumin, divided

1 lb ground beef

4-6 potatoes, cubed

1 can green chilies (optional)

cheddar cheese


Spray 4 squares of tinfoil with nonstick spray. Center onion equally on tinfoil. Combine bread crumbs, chili powder, ½ salsa, ½ garlic salt, and ½ cumin. Add ground beef and cheese. Shape into four loaves and place on onion. Spoon remaining salsa on beef and sprinkle with cheese. Combine potatoes with chilies and remaining garlic salt and cumin. Surround edges of meat loaf with potatoes Wrap up with foil (double for campfires). Cook in campfire coals, or bake at 450 in oven for 30-35 minutes.

Fried Chicken

1 cup flour

1 tsp salt

½ tsp red pepper

½ tsp paprika

Chicken wings


Coat chicken. Let sit for one hour on a cookie sheet. Coat again and fry at 350 for 11 minutes.

Chicken Broccoli Casserole


4-5 potatoes, cooked and diced

2 chicken breasts, cooked and diced

1 bag frozen broccoli, cooked and diced

1 can cream of mushroom

1 can cream of chicken

½ cup mayo

1 Tbsp lemon juice

½ cup water

1 cup shredded cheese


Layer: chicken, potatoes and broccoli in a 9x13 pan. Mix remaining ingredients and pour over layers. Top with more cheese. Bake at 350 for 30-40 minutes.

Cheesy Chicken Stuffing


2 chicken breasts, diced

a handful of cheese

a can of cream of chicken

½ container of sour cream

2 boxes of chicken stuffing, prepared


Place uncooked chicken in 9x13. Sprinkle with cheese. Mix cream of chicken and sour cream. Spread over cheese. Top with stuffing and bake at 350 for 45 minutes.

Cafe Rio House Dressing


1 cup buttermilk

½ cup mayo

½ cup sour cream

1 pkt buttermilk ranch

juice from 1 lime

3 fresh tomatillos

1 cup chopped cilantro

6 green onions

2 cloves garlic

1 jalapeno

4 tsp sugar


Blend all ingredients in blender until smooth. Keep refrigerated.

Cafe Rio Chicken


4 chicken thighs, cooked, shredded

4 C water

1 tsp salt

1/3 tsp pepper

½ tsp garlic powder

1 tsp onion powder

2 tsp chili powder

1 tsp dry oregano

¼ tsp cumin


Simmer until water is reduced and spices are blended.

BBQ Pork Loin


Place boneless pork loin in slow cooker, fat side up. Cover with water. Cook for 4-5 hours with onion chunks and 3-4 garlic cloves, halved.
It is done when pork twists apart with fork. Scrape off the fat and dump all of the water but one cup. Shred thickly. Continue cooking for one hour with one bottle barbeque sauce and one cup sugar.

Alfredo


1/3 cup soft butter

3/4 cup whipping cream

¾ cup grated parmesan

½ tsp salt

1/8 tsp white pepper

dash ground nutmeg

dash pepper

8 oz pkg fettuccine

cooked diced chicken, if wanted

cooked diced broccoli, if wanted

milk to thin sauce, if needed


Cook and rinse noodles. Mix all other ingredients in with noodles.
