1 ¼ cups milk
2 egg
2 Tbsp olive oil
½ tsp salt
2 Tbsp sugar (or substitute with brown sugar)
1 ½ cup flour
3 tsp baking powder
Put ingredients in order in the blender and blend on low. Cook on hot griddle. Batter can be refrigerated for later use. Left over pancakes can be reheated in a toaster.
